Veg fried rice is my food of choice any time any where. There are many different preparations and flavors. But my personal favorite is chinese.
The preparation is quite simple and takes only a few minutes to convert your regular boiled rice in to a delicious meal.

Ingredients:
- Fresh Green Peas : 100 grams
- Spring Onion : 1 cup (chopped)
- Carrot : 1/2 cup (chopped in fine pieces)
- Sweet Corn : 1/2 cup
- Garlic : 4-5 cloves
- Ginger : 1 inch
- Green chili : 1-2
- Soy Sauce
- Red Chili Sauce
- Vinegar
- Rice: 2 cups
- Honey
- Black Pepper
- Salt
- Cooking Oil
Preparation:
- First of all you need to prepare boiled rice.
- If you are using pressure cooker then add one spoon cooking oil with rice.
- This will prevent the rice from becoming sticky
- Do not over cook.
- Keep boiled rise aside
- While rice is cooking, you can use the time to chop the vegetables.
- My favorite vegetables in fried rice is carrots, spring onions, fresh green peas and sweet corn.
- You are free to use your favorite mix, e.g. cabbage, cauliflower, beans, bell peppers etc.
- Next, heat your favorite cooking oil in a wok/kadai.
- Add chili and fresh crushed ginger and garlic.
- Add green peas, carrot and sweet corn (add any other vegetable that requires hard cooking)
- Stir fry on high heat for 2 minutes and cook under cover on medium heat for 1-2 minutes if needed.
- Then add all the other vegetables including chopped spring onions.
- Stir fry on high heat for another 1-2 minute
- Add boiled rice and mix well.
- Add 2-3 teaspoon soy sauce
- Add 1 teaspoon red chili sauce
- Add 1 teaspoon green chili sauce
- Add 3-4 teaspoon vinegar
- Add 1 teaspoon honey
- Add 1/2 teaspoon black pepper powder
- Add salt to your taste
- Stir fry them all on high heat for 1-2 minutes
Your super delicious fried rice is ready. Enjoy it hot.
